Blog, Life

Currently…

By: Kristen Darkow

I must say, February has flown by…I can’t believe next week is March already! We’ve been busy doing adult things this week (like taxes, cleaning, grocery shopping, etc.), so while I don’t have any fun new photos or recipes to share on the blog, I thought I’d answer a few writing prompt questions about life lately. Here we go!

What We’re Eating This Week
For breakfast, I made breakfast burritos. I just fill Tumaros wraps with eggs, turkey sausage, hash browns, and salsa!

For lunch, we’re having this Taco Casserole: https://planningushealthy.com/taco-casserole

For dinner, it’s Chicken Spinach Artichoke Bubble Up! https://drizzlemeskinny.com/chicken-spinach-artichoke-bubble-up/

What I’m Reminiscing About
This week and last week I’m in full on vacation reminiscing mode.
It’s tough to come back from sippin’ margaritas by the ocean to now jumping right into work, snow shoveling, winter driving, responsibilities…Luckily, I found a spot where you can watch a webcam of the ship we were on: https://www.cruisin.me/cruise-ship-webcams/norwegian-cruise-line/norwegian-escape/
I’ve been checking on this and seeing the same spots we were at just two weeks ago. 🙂

What I’m Loving
Call me old, but this past week I’ve been loving knitting. Every Wednesday, I go visit with some residents at an Assisted Living & Memory Care facility, and one of my 97-year-old friends there re-taught me how to knit last week and insisted that I go pick up a specific kind of knitting needles and yarn. I felt compelled to come back this week with a portion of a scarf complete so I can impress her, so I’ve been working hard on that! 😉

What We’ve Been Up To
Just falling back into our normal routine after vacation! We enjoyed a weekend with no plans, so we ended up checking out Madison’s new virtual indoor golf facility, doing some shopping (we both bought new pillows…again, call us old), doing our taxes, cleaning up the house, and enjoying the 40 degree weather we had! It was delightful!

What I’m Dreading
November, when we have another full winter ahead of us. 🙂 I’m enjoying this time of year with so much promise ahead – flowers are soon to bloom, we’re seeing warmer days that melt some of the snow, the angle of the sun just feels “springy”…the warm months are coming! Now I just dread when they’re over.

What I’m Working On
A number of things! I’m working on knitting that scarf, I’m working on finishing a really great book I’m reading, I’m working on meal planning a few weeks at a time so I don’t dread grocery shopping & meal prepping each week. At work, I’m working on marketing some of our spring home listings!

What I’m Excited About
Spring – have I mentioned I’m excited about Spring? 🙂

What I’m Watching/Reading
I mentioned that I’m reading a really great book – it’s called Pieces of Her by Karin Slaughter. I’ve read another book by this author (Pretty Girls) and loved it. Warning: her books are thrillers! They’re incredible, but can also be very detailed, gory, disturbing and hard to read. If you’re into that kind of thing, I definitely recommend her books! I also recently finished Before We Were Yours by Lisa Wingate and that was also very good. Go read it. 🙂

We’re working our way through “You” on Netflix. It’s also very disturbing, but so well made and we can’t stop watching! We also recently watched “The Circle” on Netflix and we were hooked. Can’t wait until there’s another season!

What I’m Listening To
Currently? “Fresh Pop” playlist on Amazon Music.

What I’m Looking Forward to Next Month
Seeing my family! We all get together in mid-March for the WI Boys State Basketball Tournament here in Madison, and I look forward to it each year and love spending that time with my family.

That’s all I’ve got for you today! Hope you’re having a great week!

  1. Starting the week with a 3-hour snowshoeing adventure in the woods was awesome… on a perfect winter day, no less! The basketball season is winding down, which means it’s tournament time! I love officiating well-played and close games, and the excitement of the playoffs is always a thrill. I always wish that I got more tournament assignments, but that’s out of my control (it’s more about who you know than what you know). I can’t for the family to be together for the state tournament again. It’s a family tradition that I look forward to every year (and I hope everyone else still does too)!
