More Cookie Recipes

In case you didn’t know, the theme on the blog this week is cookies! Now usually this time of year Christmas cookies are what I think of. But really I think any cookie made this time of year is a Christmas cookie…right?! I don’t think there’s any limit to what kind of cookie you can make so I experimented with two new recipes and thought I would share them with you guys! Maybe you’ll add them into your holiday baking this year!

The first cookie I made is a cross between a cookie and a brownie. They turned out nice and fudgy on the inside just like a brownie. But they look like a cookie and have nice crisp edges. I usually am not a fan of nuts in my cookies or even brownies but pecans in these cookies just sounded delicious so I went for it. The pecans were a good choice! The next cookie I tried was a Brown Butter Bourbon Pecan Chocolate Chunk cookie. Yes that is a long name for a cookie! I decided I wanted to try these because Brian and I recently joined a bourbon club in town at Vino Etc. So I’ve really started to like trying new bourbons and so I thought why not bake with it! I’d also never tried browning butter before. It took longer than I expected but it did eventually brown. So if you make this recipe be patient with the butter. The other thing I adjusted was the size of the cookies. I did 1 1/2 tablespoon size cookies a opposed to the 1/4 of a cup size the recipe suggests. I thought these turned out pretty good and my husband said he loved them!
