Well in Wisconsin it appears that we have skipped fall and gone straight to winter. We are getting snow again today as I type this. But the cool weather is also perfect weather for a nice warm soup. I don’t make soups as often as I’d like, but when I do they are usually a hit. This soup is not only great for the cold weather but would also make a delicious soup for Thanksgiving.
I had a butternut squash on the counter that I didn’t know what to do with so I started searching Pinterest for some soup ideas and happened to come across this one. It is actually a chili since it has beans in it. I think when I make it again I’d add in more beans to make it a bit more filling. I also added in some Lawry’s Seasoned Salt to make the flavors come out a bit more.
This recipe is also something that can be changed to fit your tastes. You can play around with the type of beans you use. I used Great Northern beans when I made it. You can also choose how spicy you want it. I used the jalapeños but took out all of the seeds. If you wanted to add some spice though you could leave some of the seeds in.
When the soup was done I used my immersion blender to make it a bit creamier and served it with some hot dinner rolls. I also topped it with some cilantro. I’ll definitely make this recipe again! To see the full recipe to try it for yourself click here.
