Everybody loves a good hot dish, right? I think Cheesy Chicken Broccoli Rice hot dish is a favorite in many households, but we all know how unhealthy a midwestern hot dish can be. One of my favorite ways to cook is figuring out how to eat my favorite comfort foods but using healthier substitutes. Luckily, there are lots of bloggers out there who share their lightened up recipes, allowing for no shortage of creative dinner ideas. I got this recipe idea from Felicia Fitness Health, and it uses cauliflower rice, light mayonnaise, 98% fat-free cream of chicken soup, and fat free cheddar cheese as healthier substitutes. I was skeptical of cauliflower rice since I’m not a big fan of cauliflower, but I honestly can’t really tell the difference; plus, healthier ingredients allows for a bigger portion size for fewer calories…and I’m all for that. 🙂
Here’s what you’ll need:
-2 cups shredded chicken
-1 bag (10oz) of frozen cauliflower rice
-1 bag (10oz) of broccoli
-1/4 cup of light mayonnaise
-1 can cream of chicken soup (98% fat-free)
-1 1/4 cup of fat-free cheddar cheese
-3/4 cup of cornflakes
First, I cooked the chicken in a crockpot and shredded it up.
When the chicken is ready, preheat the oven to 350 degrees while you combine all ingredients (except cornflakes) and pour into a baking dish.
All that’s left to do is crush and sprinkle corn flakes on top…
…and bake for 30 minutes! In typical hot dish fashion, it is so simple and so delicious – a classic comfort food. And your daily dose of vegetables!
